not your mommy's edamame


Saturday was our first day as a vendor at the Gilbert Farmer's Market.  We had loads of fun talking to people about healthy eating and selling three of our fabulous creations.  High protein energy bars in two flavors - Cranberry Almond and Wild Blueberry Pecan - were a big hit.  We created quite the stir with our KICKS smoothie power packs.  And, the seasoned whole wheat lavosh crackers (SNAPS) made us start thinking about new ways to enjoy these crispy futons for your food. 

OK - something fresh tasting with a bit of a zing and a lot of flavor.  Hmmm......let's start with edamame for a protein filled lunch.  After a bit of experimenting, we found the perfect combination of flavors for an edamame salad that goes great with the light crunch of our Toasted Onion Snaps. 

Sharing the recipe with you just seemed like a great idea.  After all, it's our mission to make the world a healthier place for you and your family.

Edamame Salad
1 bag frozen edamame (shelled)
2 tblsp. Wildwood Zesty Garlic Aioli*
1 tblsp. capers
1 tblsp. caper juice
1/8 tsp. tarragon
1/8 tsp. chives
pinch of dill weed
pinch of basil
pinch of chervil
pinch of cracked pepper


Boil edamame according to package directions and drain.  When cool, mash until no whole beans remain.**  Add all remaining ingredients and mix thoroughly.  Add more aioli or spices to taste.   Stuff heirloom tomatoes or enjoy on your favorite crackers.

*If you can't find Wildwood Zesty Garlic Aioli, substitute Veganaise and add a bit of garlic powder to the spices.

** We use a pastry dough blender to crush the edamame.  Fast and easy to clean.


Feel free to modify this recipe to suit your taste buds.  We like LOTS of capers and caper liquid.  Modify the spice blend and you'll have so many variations, you'll never get bored
